It comes from grove pruning, so pieces vary. We sell it as trunk wood or as a mix of trunk and root, which burns hotter and lasts longer.

What olive wood is good for
Barbecue 01
Let it burn down to embers before the meat goes on. The aroma is strong, so it suits lamb, pork and beef better than delicate fish.
Wood-fired ovens 02
Gets to temperature fast and leaves little ash to sweep out. The standard choice for pizza and bread ovens.
Burners 03
Perfectly good for heat too, though holm oak lasts longer per load.

Gentle, slightly sweet aroma. A good middle ground for grilling if olive is too strong for you.

A mix of local fruit trees with orange and lemon in it. The best choice for fish and seafood on the grill.
Mixed offcuts 120 €/t
Our cheapest option. Split prunings of mixed species, irregular sizes. For heating on a budget, not for the barbecue.

ENplus A1 certified, under 0.7 % ash. For pellet stoves only, sold by the sack or the pallet.
Charcoal desde 6 €/saco
Marabu and holm oak charcoal for barbecues and restaurants. Embers in twenty minutes, no flame, steady heat.

What is the difference between trunk and root?
Root wood is denser, burns hotter and lasts longer, and it costs more. Trunk wood is easier to light and easier to handle. We sell a mix at the lower price and pure trunk wood at the higher one.
Does the smoke taste of olives?
Not of olives, but it is a distinct, slightly sweet smoke that people recognise. If you want something that does not compete with the food, almond is milder.
Can I use it in a pizza oven?
Yes, it is the usual choice around here. Low ash and quick to temperature are exactly what an oven needs.
