What almond wood is good for
Slow roasting 01
Steady embers and a gentle smoke. Good for a long cook where a strong wood would overpower everything.
Barbecue 02
The safe choice if guests are fussy or you are cooking chicken and vegetables as well as red meat.

Burns hot and clean. A good middle ground between olive and holm oak.

What people ask us
How is it different from olive?
Same sort of heat, much milder smoke. Olive announces itself; almond stays in the background. For fish, chicken or anything delicate, almond is the better bet.
Is it good for a log burner?
Yes. It is not quite as dense as holm oak, so you reload a little more often, but it burns clean and lights easily.
Does it spit?
Not when it is properly dry, which is why we season everything for more than twelve months before it goes out.
