Charcoal is half-burnt already, which is why it is quick and clean. Wood takes longer and flames first, but gives you aroma. Plenty of people use both.

What to know about charcoal

A quick barbecue 01

Twenty minutes from lighting to cooking, no flame to wait out. When people turn up unannounced, this is what you want.

Charcoal plus wood 02

Charcoal underneath for reliable heat, a couple of olive or fruitwood logs on top for the aroma. Best of both.

What is marabú?

A very dense Cuban hardwood that makes exceptional charcoal: long-lasting embers, little ash, almost no smoke. It is what most serious grill kitchens use.

Marabú or holm oak charcoal?

Marabú lasts longer and burns hotter. Holm oak in 15 kg sacks works out cheapest per kilo, at 1.20 € a kilo, and is plenty for a family barbecue.

How long does a sack last?

A 3 kg sack covers one barbecue for a few people. A 10 kg sack will do several. If you grill most weekends through the summer, buy the 15 kg.
