Mild and sweet

Almond Wood

A softer, sweeter smoke than olive, and plenty of heat. The wood to pick when you do not want the fire to shout over the food.

Almond groves are everywhere in this part of Murcia, so this is genuinely local wood and not something trucked across the country.

How to use it

What almond wood is good for

Slow roasting 01

Steady embers and a gentle smoke. Good for a long cook where a strong wood would overpower everything.

Barbecue 02

The safe choice if guests are fussy or you are cooking chicken and vegetables as well as red meat.

Burners 03

Burns hot and clean. A good middle ground between olive and holm oak.

Questions

What people ask us

How is it different from olive?

Same sort of heat, much milder smoke. Olive announces itself; almond stays in the background. For fish, chicken or anything delicate, almond is the better bet.

Is it good for a log burner?

Yes. It is not quite as dense as holm oak, so you reload a little more often, but it burns clean and lights easily.

Does it spit?

Not when it is properly dry, which is why we season everything for more than twelve months before it goes out.
